Peapod Soup

¾ onion 

4-6 garlic cloves

1 tsp thyme 

Pepper 

Salt 

Pods from 1lbs peas

4 cups veg stock 

Olive oil

Basil 

Sour cream

We love fresh peas in the summer, but it always felt like such a waste to just compost all the pods. Saute the onion and garlic until soft. Add the peapods, vegetable stock, thyme, salt and pepper and bring to a boil. Reduce to a simmer for 45 minutes. Let cool then in batches blend the soup being careful to not let the peapods clog your blender. Strain the soup and refrigerate overnight or eat immediately. When ready to eat, finish it with a couple drops of good olive oil, sour cream, and chopped basil.
