Carrot Pineapple Jell-O Salad
1 package lemon Jell-O
1 small can crushed pineapple, drained (save the pineapple juice)
1 cup finely grated carrots
Make Jell-O according to the package directions, but instead of cold water, use the juice from the drained crushed pineapple, adding water if necessary to make 3/4 cup. Don’t use a full cup of cold water according the package directions.
Pour the Jell-O mixture into a square glass Pyrex dish. Gently stir in the grated carrots and crushed pineapple. Place in refrigerator until set. To serve, slice the salad into squares and place each square on a lettuce leaf. Drizzle with mayonnaise thinned with a little milk; sprinkle with paprika.
