Million Dollar Cookies
I remember how hard it was for me to press these cookies flat when I was first learning to make them, dipping the bottom of a glass into a small mound of sugar (I’ve learned over the years to rub a tiny bit of cookie dough on the glass bottom first, so the sugar sticks) then pressing the glass down firmly and steadily onto a little ball of cookie dough so that it spreads and bakes evenly. Once I got the hang of it, they were easy to make, and they taste impressively fancy. If you press hard and make the cookies thin, they practically melt in your mouth when you eat them.
1 cup butter, softened
1/2 cup white sugar
1/2 cup light brown sugar
1/4 tsp. soda
1/2 tsp. salt
2 cups flour
1 egg
2 tsp. vanilla
1/2 cup walnuts, toasted and chopped
1/2 cup sugar
Cream butter and white sugar together; add brown sugar, continue mixing. Add egg; mix till blended.
Sift dry ingredients together; add to butter mixture. Stir in vanilla and nuts.
Chill dough for 2 hours. When ready to bake, preheat oven to 350 degrees.
Spoon out teaspoon size amounts of dough; roll into a ball and place on ungreased cookie sheet at least 1 1/2 inches apart. Place remaining 1/2 cup sugar on a small saucer; rub a very small amount of the dough onto the bottom of a glass to make the sugar stick. Dip the glass into the sugar, then press down firmly on balls of dough to flatten. This works better if the glass bottom is flat. Bake cookies for 10-12 minutes until light brown around the edges. Cool on baking racks.
