Mary’s Pecan Pie

When we had Thanksgiving dinner at Mary’s apartment, this was her contribution. Think of all the work that went into that meal—Mom baking the turkey all night, wrapping the roasting pan in layers of newspaper and placing it in the trunk for the three hour drive to Minneapolis (not to mention all the side dishes she made too). The thought of that turkey incubating for so many hours makes Mike wonder how we all survived. I think the combination of all that goodwill from being together, not to mention the alcohol, saved us from food poisoning.

3 eggs

3/4 cup sugar

1/4 pound butter, melted

1 cup dark corn syrup

1 cup pecans

Beat eggs till light, slowly adding rest of ingredients, except pecans.

Pour into and unbaked pie shell, bake 40 minutes at 300. Remove pie from oven and place pecans on top. Return pie to oven and bake at 350 for 15-20 minutes. Serve with whipped cream.
