Ginger Cookies
A recipe more for memory’s sake than actual baking; “the boys” and I remember eating these fat, soft cookies, but I can’t imagine any of us today making cookies with lard. If you want to try these, use a mixture of butter and margarine.
Pinch of salt
1 cup sugar
1 cup lard Cream these ingredients fairly well
2 eggs (add to the mixture and beat well) 1 cup molasses (dark)
4 T. vinegar
2 tsp. baking soda dissolved in 1/4 cup hot water
1 1/4 tsp. (heaping) ginger
Add enough flour (about 4 cups) to make a dough stiff enough to handle and roll out on a board. Sprinkle sugar over top of cookies before baking. (Tressa’s cookies were big— and thick—maybe use a glass as a cookie cutter— and soft.)
Bake in moderate oven. (I would try 350 degrees for 8-10 minutes, maybe more, depending on how thick your cookies are. You’ll have to experiment with baking time, since she didn’t leave us directions.)
