Del’s Spice Bars

This was from one of Elsie’s friends or else she was a sister-in-law. Elsie served spice bars for “coffee;” the recipe has ingredients she used a lot: dates, spices and coffee.

1 cup shortening (I would use butter)

2 cups brown sugar

3 eggs

1 cup cold coffee—dissolve

1 tsp. baking soda in the coffee

1 tsp. vanilla

1/2 tsp. salt

1/2 tsp. cinnamon

1/2 tsp. ginger

1/2 tsp. nutmeg

1 cup chopped walnuts

1 1/2 cups chopped dates

2 1/2 cups flour

Like so many of Elsie’s recipes, this has no directions. I’m guessing you cream the shortening and sugar and mix in the rest of the ingredients. The recipe does say to bake at 350 for 20-25 minutes. Try a 9 x 13 pan.

Frost with powdered sugar frosting: Cream 4 T. butter with 1 cup sifted powdered sugar, dash of salt, 1 tsp. vanilla, 1 -2 T. milk, beat till smooth (you may have to add more milk or powdered sugar)
